Fresh fish needs careful handling at every stage of its journey from processing plant to kitchen. Reliable refrigeration, precise preparation and secure packaging all play a part in preserving quality. In Kisbajcs, these processes became more efficient thanks to a major upgrade of the local fish-processing facility.
Bajcshal Ltd., formerly known as Győri “ELŐRE” Fisheries Production Cooperative has been part of Hungary’s fish-farming and processing sector for many years. Its Kisbajcs plant produces a wide range of products, from fresh and ready-to-cook fish to fish soup, smoked fish and other processed specialities. The products are sold through the company’s own fish shops and also supplied to restaurants and hotels.
As demand grew, the company needed its processing capacity to grow with it. An EU-supported project under the Hungarian Fisheries Operational Programme made it possible to invest in new machinery and introduce more up-to-date processing technologies.
Several stages of production were improved. New equipment made weighing processed fish more precise, while upgrades to the packaging system helped make this part of the process faster and more reliable. Good packaging is about much more than appearance: it helps preserve freshness, supports food safety and ensures products can be transported and displayed under the right conditions.
Refrigeration was another important focus of the investment. Fish is particularly sensitive to temperature, so maintaining an uninterrupted cold chain from processing through to sale is essential. The development strengthened the cooling capacity of the Kisbajcs facility and also introduced more modern refrigeration solutions in the company’s fish shops. The plant operates in line with the IFS food safety standard, covering the full production process.
The improvements have also made day-to-day work easier for employees. More streamlined processes have created cleaner, safer working conditions and allow larger quantities to be processed within the same amount of time. With modern equipment, more reliable production and improved storage and packaging, the Kisbajcs plant is now better equipped to deliver high-quality Hungarian fish products to consumers efficiently and consistently.
