It is well known that consuming fish is very healthy. Fish contain a multitude of nutrients essential for the proper functioning of the human body, such as high-quality proteins, various vitamins, and minerals. One of the pioneers of Hungarian fish processing is the Budaörs-based Fishmarket Fish Trading Limited Liability Company, which successfully implemented a project with the involvement of EU support.
The development involved expanding production capacity and sales channels, renewing technologies, and increasing food safety. In the company’s fish processing plant in Budaörs, the workspace has been increased by 60%, providing a much longer workbench for processing various types of fish. In addition, the packaging machine used for vacuum packaging the SELFISH© product line produced by the company has been replaced from a single-chamber to a double-chamber system, allowing for the production of up to 4800 ultra-fresh, microwaveable products in a single shift with continuous operation. As part of the project, an ultra-deep freeze warehouse was also acquired, capable of storing products at -70°C until the moment of delivery. The quality and biochemical parameters of the food frozen in this way remain in the state preserved at the moment of freezing for practically unlimited periods. The custom-made ultrasonic humidifier-equipped fresh fish cooler ensures the preservation of fresh fish products until they are sold. In the refrigerated space, the 95% humidity level promotes a longer storage time, and the cooling can be achieved more efficiently with less energy consumption.
Thanks to the renovation of the plant, the available operational area has increased, and the base damage to the thermal insulation panels has been repaired. The high-cooler storage facility has been completed, as well as the essential special external closed refrigerated waste storage facilities for the processing plant. The new facility includes a pallet storage area with high storage capacity and a separate pallet breaking room. A quality assurance laboratory has also been established for the storage of fish meat with special requirements and for monitoring quality standards, which allows for continuous sampling during the production process, thus providing real-time information about the quality of the products. Thanks to the investment, a cultured working environment has been created, complemented by a new social block, complying with the personal hygiene requirements of food safety regulations and occupational safety regulations.
As part of the tender, fish transport trucks equipped with special superstructures were also purchased. With their help, it became possible to transport the various products produced at the facility separately, whether they are pre-cooled or quick-frozen products. With procurement, it is possible not only to deliver according to special requirements but also to measure on-site.
